Step 1: Brown beef cheeks aggressively – this is key for flavour!

Step 2: Saute garlic, onion, carrots and celery for the sauce

Step 3: Add red wine braising liquid ingredients

Step 4: Slow cook the beef cheeks until they are fall-apart tender – stove 2.5 hrs, oven 3.5 hrs.

Step 5: Puree sauce to thicken into a gravy-like consistency

Step 6: Serve beef cheeks with sauce over creamy mashed potato or cauliflower.
